This Tex-Mex breakfast is sure to be a crowd pleaser! Start by gathering your ingredients, which include bean chilaquiles with avocado and queso fresco, Mexican breakfast salad, sour cream, olive oil, leftover crock pot chuck roast (shredded), frozen Brown ‘N Serve beef sausage links (chopped), eggs and a small onion (diced). Many of these ingredients can be found ready-made at the grocery store, such as tortillas, organic refried beans and salsas. The remaining ingredients are also easy to prepare, such as the roasted sweet potatoes. Once you have all your ingredients together, you’re on your way to a delicious Tex-Mex breakfast!
How to cook the perfect Tex-Mex breakfast
The perfect Tex-Mex breakfast starts with preheating the oven to 375°F. To make the meal, start by combining two tablespoons of olive oil and two-thirds of a cup of sour cream in a large bowl. Add in three cups of leftover crock pot chuck roast, shredded, and five frozen Banquet® Brown ‘N Serve(tm) Beef Sausage links, chopped. Mix the ingredients together and spread them out in a 9×13 inch baking dish. Crack four large eggs over the top before sprinkling one small onion, small diced, over the top of the casserole. Bake for 25 minutes before serving with huevos rancheros casserole, bean chilaquiles with avocado & queso fresco, basic breakfast tacos, or even a Mexican breakfast salad. Enjoy!
